So, I had it half right about <em>pezsg\u0151<\/em> it seems, it means any wine whereby the bubbles have been created within the wine, so to speak, by the interaction of yeast and sugar, so this includes wines where the second fermentation took place either in the bottle (traditional method or transfer method) or in tank (Charmat method).<\/p>\n<p>So now we&rsquo;ve cleared up the Hungarian sparkling wine vocabulary, let&rsquo;s take a look at the history of sparkling wine in Hungary, as it certainly has a sparkling one. At the start of the 20th century, Hungary was only surpassed by France in the production of sparkling wine, and Hungarian <em>pezsg\u0151<\/em> was exported far and wide. Prior to World War I, Hungary had over 20 sparkling wine manufactories and around 6-8 million bottles were exported throughout Europe!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: block; margin-left: auto; margin-right: auto;\" src=\"https:\/\/bor.hu\/media\/uploads\/hirek_2022\/04_aprilis\/hungarian_sparkling_wine_culture\/pezsgo_bor-hu.jpg?1650554135548\" alt=\"\" width=\"800\" height=\"522\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2><strong>The first Hungarian sparkling <\/strong><\/h2>\n<p><strong><a href=\"https:\/\/winesofhungary.hu\/wine-types\/sparkling-wines\" target=\"_blank\" rel=\"noopener\">Sparkling wine<\/a><\/strong> has been produced in Hungary since the second half of the 19th century, with the main centres in Pozsony (Bratislava) and Budafok; the latter is still the centre of modern sparkling winemaking in Hungary. The late 19th century saw the establishment of two major sparkling wine producers, in particular J&ouml;zsef T&ouml;rley, who moved his production in 1882 to Budafok from Reims, where he had previously worked for Roederer before founding his own business. He also bought vineyards in nearby Etyek when he saw the quality of the base wines he had sourced there for his Champagne House. <strong><a href=\"https:\/\/winesofhungary.hu\/wine-tourism\/etyek-buda-wine-district\" target=\"_blank\" rel=\"noopener\">Etyek-Buda<\/a><\/strong> has the climate and soils that most resemble those of Champagne of all the <strong><a href=\"https:\/\/winesofhungary.hu\/wine-regions\" target=\"_blank\" rel=\"noopener\">Hungarian wine districts<\/a><\/strong>. Moreover, the cellars carved out of limestone ensured the constant temperature needed to produce high-quality sparkling wine. The cellar was also equipped by French specialists and his cellar master, Louis Fran&ccedil;ois, was also French. A few years later, he too founded his own winery nearby. As Hungarian aristocrats already loved Champagne, his own local <em>pezsg\u0151 <\/em>quickly gained popularity with them and the burgeoning middle classes. <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/torley-sparklingwine-cellar-torley-sparklingwine-manufactory-3763\" target=\"_blank\" rel=\"noopener\">T&ouml;rley<\/a><\/strong> was an innovative company, introducing refrigerative disgorging into Hungary, and J&oacute;zsef T&ouml;rley was knighted by Franz Joseph I.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: block; margin-left: auto; margin-right: auto;\" src=\"https:\/\/bor.hu\/media\/uploads\/hirek_2022\/04_aprilis\/hungarian_sparkling_wine_culture\/torley1_bor-hu.jpg?1650554248354\" alt=\"\" width=\"800\" height=\"522\" \/><\/p>\n<p style=\"text-align: center;\"><em>The T&ouml;rley Castle in Budafok<\/em><\/p>\n<p>&nbsp;<\/p>\n<h2><strong>Late twentieth century<\/strong><\/h2>\n<p>Due to nationalisation, no cellars remained in private hands after 1950, but sparkling wine was still produced in huge volumes by state-run Hungarovin and giant companies in Balatonbogl&aacute;r, focussing not on quality but uniformity and volume. After the system change, Hungarovin-Balatonbogl&aacute;r was bought by the German Henkell, who began to use the name T&ouml;rley once again for sparkling wine, with their premium range named Fran&ccedil;ois Prestige after T&ouml;rley&rsquo;s former cellarmaster. Nowadays, a lot of sparkling wine in Hungary is still produced using the Charmat method, but traditional method is increasingly making headway again.<\/p>\n<h2><strong>Renaissance of sparkling wine<\/strong><\/h2>\n<p>The last few decades have seen growing numbers of wineries making high-quality bubbly all over Hungary, with many existing wineries adding a sparkling or semi-sparkling wine to their range. T&ouml;rley Sparkling Wine Manufactory is still the market leader with over 50% of the market and a wide range of wines from cheap and cheerful to top-quality traditional method wines. You can visit their museum on the edge of Budafok to learn more about sparkling wine in Hungary, and sparkling wine in general.<\/p>\n<p>Like elsewhere, the most popular varieties for sparkling wine, <strong><a href=\"https:\/\/winesofhungary.hu\/grape-varieties\/black-grape-varieties-red-wine-styles\/pinot-noir\" target=\"_blank\" rel=\"noopener\">Pinot Noir<\/a> <\/strong>and <strong><a href=\"https:\/\/winesofhungary.hu\/grape-varieties\/white-grape-varieties-white-wine-styles\/chardonnay\" target=\"_blank\" rel=\"noopener\">Chardonnay<\/a><\/strong>, are cultivated in Hungary, especially in the <a href=\"https:\/\/winesofhungary.hu\/upper-pannon\/etyek-buda-wine-district\" target=\"_blank\" rel=\"noopener\"><strong>Etyek-Buda Wine District<\/strong><\/a>. However, Carpathian Basin varieties, like <strong><a href=\"https:\/\/winesofhungary.hu\/grape-varieties\/white-grape-varieties-white-wine-styles\/furmint\" target=\"_blank\" rel=\"noopener\">Furmint<\/a><\/strong>, <strong><a href=\"https:\/\/winesofhungary.hu\/grape-varieties\/white-grape-varieties-white-wine-styles\/harslevelu\" target=\"_blank\" rel=\"noopener\">H&aacute;rslevel\u0171<\/a><\/strong> and <strong><a href=\"https:\/\/winesofhungary.hu\/grape-varieties\/white-grape-varieties-white-wine-styles\/olaszrizling\" target=\"_blank\" rel=\"noopener\">Olaszrizling<\/a><\/strong> can all make good sparkling wine, due to their relative neutrality and good acidity.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: block; margin-left: auto; margin-right: auto;\" src=\"https:\/\/bor.hu\/media\/uploads\/hirek_2022\/04_aprilis\/hungarian_sparkling_wine_culture\/mor_paulusborhaz_pezsgo_toltes_mg5432_langnandor_20220322-_adobergb_dpi300_full_(1)_bor-hu.jpg?1650554375797\" alt=\"\" width=\"800\" height=\"522\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2><strong>Where does Hungarian sparkling wine come from and who&rsquo;s making it?<\/strong><\/h2>\n<p>The most significant traditions are in cool <strong><a href=\"https:\/\/winesofhungary.hu\/upper-pannon\/etyek-buda-wine-district\" target=\"_blank\" rel=\"noopener\">Etyek-Buda<\/a><\/strong> and <strong><a href=\"https:\/\/winesofhungary.hu\/upper-pannon\/mor-wine-district\" target=\"_blank\" rel=\"noopener\">M&oacute;r<\/a><\/strong>, but there are also excellent wines being produced in <strong><a href=\"https:\/\/winesofhungary.hu\/wine-regions\/tokaj-wine-region\" target=\"_blank\" rel=\"noopener\">Tokaj<\/a><\/strong> (<strong><a href=\"https:\/\/winesofhungary.hu\/wine-types\/sparkling-wines\" target=\"_blank\" rel=\"noopener\">traditional method<\/a><\/strong> and generally from Furmint), <strong><a href=\"https:\/\/winesofhungary.hu\/balaton\/nagy-somlo-wine-district\" target=\"_blank\" rel=\"noopener\">Soml&oacute;<\/a><\/strong>, <strong><a href=\"https:\/\/winesofhungary.hu\/wine-tourism\/eger-wine-district\" target=\"_blank\" rel=\"noopener\">Eger<\/a><\/strong> and on the southern shores of the <strong><a href=\"https:\/\/winesofhungary.hu\/wine-tourism\/balaton-wine-region\" target=\"_blank\" rel=\"noopener\">Balaton<\/a><\/strong>.<\/p>\n<p>The modern version of J&oacute;zsef T&ouml;rley is perhaps J&oacute;zsef Kreinbacher, who founded the <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/kreinbacher-estate-4480\" target=\"_blank\" rel=\"noopener\">Kreinbacher Estate<\/a><\/strong> in the volcanic Nagy-Soml&oacute; Wine District in 2002, with their first <em>pezsg\u0151 <\/em>launched in 2014. Their &ldquo;<em>pezsg\u0151<\/em>&rdquo;-s have won numerous awards and always feature at the top of any Top lists, in part thanks to their consultant winemaker from Champagne, cellarmaster Christian Forget. Their wines are made primarily from Furmint grown on basalt soils, showing you don&rsquo;t need limestone, Pinot Noir or Chardonnay to make fantastic sparkling wine.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: block; margin-left: auto; margin-right: auto;\" src=\"https:\/\/bor.hu\/media\/uploads\/hirek_2022\/04_aprilis\/hungarian_sparkling_wine_culture\/kreinbacher4_bor-hu.jpg?1650554517759\" alt=\"\" width=\"800\" height=\"522\" \/><\/p>\n<p style=\"text-align: center;\"><em>Tasting at Kreinbacher Estate<\/em><\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p>In Tokaj, producers such as <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/grof-degenfeld-wine-estate-and-castle-hotel-3962\" target=\"_blank\" rel=\"noopener\">Gr&oacute;f Degenfeld Wine Estate<\/a><\/strong>, <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/dereszla-winery-4452\" target=\"_blank\" rel=\"noopener\">Dereszla Winery<\/a><\/strong>, <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/pelle-cellar-4417\" target=\"_blank\" rel=\"noopener\">Pelle Cellar<\/a><\/strong>, <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/sauska-tokaj-winery-4422\" target=\"_blank\" rel=\"noopener\">Sauska Tokay Winery<\/a> <\/strong>and many others are crafting their own <em>pezsg\u0151<\/em> from both Tokaj and Champagne varieties. Along the southern shore of the Balaton, traditional producer <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/garamvari-estate-3950\" target=\"_blank\" rel=\"noopener\">Garamvari Estate<\/a><\/strong> produces a wide range of fizz, and the <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/bujdoso-winery-3601\" target=\"_blank\" rel=\"noopener\">Bujdos&oacute; Winery<\/a><\/strong> produces both <em>gy&ouml;ngy&ouml;z\u0151<\/em> and <em>pezsg\u0151<\/em>, while in Eger, <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/st-andrea-vineyards-and-winery-3945\" target=\"_blank\" rel=\"noopener\">St Andrea Vineyards and Winery<\/a><\/strong> also craft some elegant bubbly.<\/p>\n<h2><strong>Let&rsquo;s not forget the trendy <\/strong><\/h2>\n<p>Many producers, generally those following a more natural or organic approach, are also experimenting with the ancient technology of p&eacute;t-nat. One of the first was Attila P&aacute;lffy of <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/palffy-winery-4488\" target=\"_blank\" rel=\"noopener\">P&aacute;lffy Winery<\/a><\/strong> in K&ouml;vesk&aacute;l, who stormed Hungary with his ABNORMAL and P.A.N.K labels, while others such as Zoli <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/heimann-family-winery-3662\" target=\"_blank\" rel=\"noopener\">Heimann<\/a><\/strong> in Szeksz&aacute;rd, the <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/wassmann-biodynamic-wines-villany-4426\" target=\"_blank\" rel=\"noopener\">Wassmann<\/a><\/strong> in Vill&aacute;ny and the <strong><a href=\"https:\/\/winesofhungary.hu\/wineries\/bussay-winery-3632\" target=\"_blank\" rel=\"noopener\">Bussay Winery<\/a><\/strong> in Zala are all trying their hand at it too!
